Brief Overview
Distilled monoglyceride is an organic compound that has the physical appearance of white beads. It is commercially prepared with the raw materials of vegetable and animal fatty oils. It is composed of glycerol linked to a fatty acid via an ester bond. Distilled monoglyceride is used as an emulsifier agent for mixing ingredients in the correct proportions.
Manufacturing Process
Triglycerides is interesterified with glycerol using a high-temperature catalyst to produce industrial monoglyceride. This reaction is glycerolysis and produces a mixture of 50% monoglyceride. This mixture is further distilled using the molecular distillation process to obtain distilled monoglyceride of minimally 90%.
Food Industry
Distilled monoglyceride is widely used in the food industry as an emulsification agent, dispersion agent, foaming agent, defoaming agent, starch anti-aging, and fat agglomeration control. It is used in the production of beverage products and instant foods. It is added to improve notably dissolution, fragrance, color, and stability of beverages. It can form a complex with protein and starch. It could prevent starch from recrystallizing after cooling because of the formation of the infusible complex with straight chain form starch.
Plastic Industry
Distilled monoglyceride is used as a main internal lubricant material along with stearic acid to produce Poly Vinyl Chloride (PVC) pipe and polyethylene waxes. It is used as an anti-scaling agent for producing polyethylene and polypropylene products.
